"They are good in risotto and stir fry type of dishes but I found it challenging to store them properly. They were prone to mold. I haven't grown them again because of how much space they take up but they are great (too good) producers!"

Last year's artichokes have produced about 100 bulbs, I've already given many away and have more.  Feel free to let me know if you'd like some.  Growing them requires a wide berth.
